Easy, Delicious, No-Bake Oat Bars

This super easy recipe has just five ingredients and are sooo easy to make! No oven required! These oat bars are great for breakfast or to bring along for a snack while you’re doing your afternoon mom taxi duties. I even have one when I’m craving something sweet.


I only have old fashioned oats at home, so to make the bars softer, I threw them in the food processor for a few pulses to break them up a bit and then I let the whole batter sit for 30 minutes before putting them in the fridge/freezer to moisten the oats, but this isn’t necessary if you don’t have time or like the wholesome taste of the old fashioned oats. You can literally add anything you want to these, dried fruit, protein powder, you name it. I add all- natural mini chocolate chips so the kids will gobble them up too!


Lentil Soup

Servings: 20

Ingredients

2 cups oats, old fashioned (see above) or quick both are fine

1 cup of your favorite nut butter, or whatever you have on hand

½ cup sliced nuts of your choice

½ cup chopped dried fruits or mini chocolate chips (I like this brand)

¼ to ⅓ cup honey

Sea salt to taste (I use Richmond Real Salt)

Cinnamon to taste


Instructions

Put all ingredients in a bowl and mix well. I use my hand to make sure the oats and other ingredients are well blended with the nut butter. Start with ¼ cup of honey and add more as needed. The honey gives it moisture. If you are using old fashioned oats and have time, let it sit for 30 minutes. If not, skip it.


Line a 9X9 pan with parchment paper. Evenly press the “batter” into the pan. Put into the freezer to firm up. You can store them in the fridge or freezer. They are best eaten cold because they tend to crumble as they warm up, but they are still delicious!
